Caribbean cuisine is all about good old home cooking: delicious combinations of fresh products with a healthy dash of fresh spices with natural flavourings.

The shop is overseen by Dulcie Joseph, who has been active in community development work in London for over 30 years. The shop is owned by her son, Keith Joseph. Dulcie works at the shop on a voluntary basis and helps out her son. She uses her social work skills to interact with the customers. To some, she is "Auntie" and to others, "Mum".

The cooking is done under Dulcie's supervision by a team of four cooks, who work on a part time basis. Quality is the watchword with ingredients, which are carefully chosen and purchased from special providers. Some arrive directly from Trinidad. Dulcie makes her own secret Masala mix.

The inside of the shop is spacious and sqeaky clean. The standard of hygiene has been commended by local health inspectors.

The shop has a wide customer base. Promoted through its website, people from other parts of England and Europe make their way to the shop. Well-known footballers and sports personalities are regular customers.

The shop also caters for big occasions: weddings, birthdays, office parties, christenings and funerals. The shop has catered for several Brent Council events and also for over 4,000 people at the Nike Basketball Tournament.

If you want to eat something out of the ordinary, make your way to the Trinidad Roti Shop, you won't be disappointed.
